To simply answer that question, culture and agriculture within the region makes the food different. I love Chinese and Japanese food, and have dabbled in Viatnamese food, and am also enjoying myself. I would start off with Pho. For myself, I would be willing to take a risk at a different cultural dish for $10 (relative cost of most Viatnamese dishes).
